Get ready to try our quick homemade Pho recipe. You’ll need 8 cups beef stock, 2 slices fresh ginger, 1 thinly sliced onion, 2 sliced garlic cloves, 3 star anise, 2 cinnamon sticks (bruised lightly), 2 tbsp caster sugar, 1/3 cup fish sauce, 375 g Pho rice noodles (the flat kind), 400g beef fillet (very thinly sliced), 1 cup bean sprouts, 1 red chilli (remove seeds and chop thinly), 1/3 cup each of basil, coriander and mint. Place stock and 2 cups water in a saucepan with onion, garlic, cinnamon, ginger, star anise, sugar and fish sauce. Bring to a boil. Reduce heat and cover. Simmer for 20 minutes. Strain to remove all of the solids and return to pan. Prepare Pho noodles as per the packet instructions and drain well. Divide the noodles into 4 bowls and place the thinly sliced beef on top. Pour hot soup over to lightly cook the beef. Top with bean sprouts and garnish with fresh herbs and chilli.
