Homemade ramen

Ingredients you’ll need -1 tbsp sesame oil, 4 cloves of garlic (minced), 1 tbsp fresh grated ginger, 4 cups of chicken broth, 4 oz shiitake mushrooms, 1 tbsp soy sauce, 3 packs of Yaki-Soba or other refrigerated ramen noodles (discard the seasoning sauce pack), 3 cups baby spinach, 1 grated carrot, 2 tbsp chopped chives. Heat sesame oil in large saucepan. Add ginger and garlic and stir for 1 to 2 mins till fragrant. Add chicken broth, mushrooms, soy sauce and 3 cups of water and whisk till the mixture comes to the boil. Reduce the heat and simmer for 10 mins until mushrooms are soft. Stir in the ramen noodles until they become soft and loose and cook for 2-3 minutes. Add spinach, carrot and chives and cook till the spinach begins to wilt. Serve right away.

Cook the ramen noodles in a pot of water for 5 minutes. Drain and leave to one side. Place 3 cups chicken stock, 2 cups water, 2 cloves garlic, 4 tbsp soy sauce, 1 tsp Worcestershire sauce, 1/2 tsp Chinese 5 spice, 1 shake chilli powder, 1 tsp white sugar and 2 slices of fresh ginger in large pot and bring to the boil. Let it simmer for 5 to 8 mins. Pour mixture through a sieve to remove the garlic and ginger pieces. Add the ramen noodles and the toppings of your choice.
